Where can I find better instructions on building the Titanic model?

The best place to find information on building a better model is at the Rivet Counter site. This site was made by David Cotgreave to assist in the building of the 1:350 scale model. The initial site was based off of the Titanic Scale Model Tutorial, but has grown to be much more. It has step by step photos of his own model and tells you how to scratchbuild or rebuild from the original kit. The site also contains the best information of every vent located on the ship and exactly where it goes. Even if it wasn't provided by the model.
